Agriculture is obviously critical in Palestine, and has to carry on no matter what. Manchester-based Olive Cooperative run tours in both Palestine and Israel, staying with people, working for peace, and, if you time it right, helping with the olive harvest. They also run Arabic language courses. It's a little late for this year (we were slow to get the info up here, sorry) but there are trips leaving in October and November, and plenty of opportunities for next year too.
